The video format on blu-ray is inherently compressed/lossy. Uncompressed video is massive. One episode @ 1080p could easily be well over 200 gb.

If memory serves, even the intermediate files used during production aren't uncompressed, or even lossless. Uncompressed is bloody huge, and lossless compression is still pretty damn big. If lossless is too big to be worth it for the production process, home video certainly is not going to be uncompressed.

Film archiving is important so when a property becomes public domain, a party wanting to use the materials simply has to ask the former IP holder for the materials.

The episode count is inherited from the days of DVDs(which aren't even over, despite being in their twilight). Archives don't need menus and can use BD-XL plus any codec they damn well please since they're just storing them for later use. h.265 isn't exactly an option on production BDs, for example.
