So is this one of those "human boy who grew up with non-humans chances upon and saves human girl of high status, finds out about her circumstances, and proceeds to not give a damn about how this (to him) mysterious human society works and tries to help her based on what he feels is right" plots?

Most of the Tales of X plots tend to use a pretty standard set-up, then mess with it as the plot develops. Tales of Graces, for example, did a pretty good job of messing with your expectations, IMO.

That's generally the idea behind most Tales games. They subvert typical JRPG tropes and expectations.

I actually just played my first tales game, Symphonia on PS3. And good to hear that most of the tales games do that. I was totally surprised with the way Symphonia turned compared to generic way it was set up.

Absolutely. It's actually one reason the series has stayed so popular over the years (another reason is the entertaining and constantly evolving battle system as well as the characters in each game).
