Hmm I'm not a fan of the studio but the theme song and character visuals looks cute so might give this a try.

Plate subduction: I think that's what they tried in the 2012 movie but it didn't make much sense there as to explain to why Mt Everest fell 20000 meters below sea level and moved 6000 miles from where it was for it to sink.... because why have any old mountain when you can one exact old mountain? Here, things fell down just enough that they needed to launch coastal cities... out to sea...

Should I fixate more on the "how" or the "why"?

It's an anime original, huh? I remember laughing at the fact that all the people in this occupation were female- because "reasons"- but that's just the tip of the mountain now....

I'd personally include males in the setting more prominently but okay.

Yes, I agree. I only watched Inari Kon Kon from Production IMS.
