The original TV series.
The Death and Rebirth and End of Evangelion movies recap the series and take things a bit further, with a resolution of sorts.
The reboot movies are a reimagining of the concept. The first film follows the series mostly, the second veers away into something different. The third (which isn't much good) bears little or no resemblance to the original franchise.
In addition, there is a booklet which explains a great deal about the show. If I remember right, it was a program guide sold at theaters during the airing of End of Evangelion in Japan. The cover is black with a big red cross on it with the text "The end of" on the vertical part of the cross, and "Evangelion" across the horizontal part. I think most fans call this the "Red Cross Book". It was originally in Japanese though I am sure you can find English translations of it online. That book explains a lot of the details which the show itself does not make very clear. I highly recommend reading that as you watch the show.
Also, watch the TV twice if not more. There are a lot of details which aren't necessarily obvious the first time you watch it, yet become apparent on repeat viewings.
