Actually, there is a whole anime called Fairy Florence in which the entire soundtrack is classical music and this is the driving force for the story.

And believe it or not, Ravel's Bolero was used in Digimon 01 and 02. Can't vouch for that in the American English dub, but I did hear it in the Mexican Spanish dub.

Blood+ has plenty of classical pieces in it.
Chopin Raindrop Prelude in D Flat Major, Op 28 No 15 is played by one of the charactors,
Prelude from Bach's Cello Suite no. 5 is what Hagi is always playing,
and of course Diva's Song sung by Elin Carlson

Even Bleach has some classical instrumental music in it. That rare violin music is also good.

Does anyone know how I could find out who the actual pianist is that plays the music attributed to Eyes Rutherford in Spiral? I know the titles of the pieces played but would like to know who actually played it. Beautifully done, expressive and passionate.

All I have is two words: Princess Tutu. Ballets, operas and everything else you can think of.
