1 LN volume being adapted in 8 episodes is a good way to have a more faithful adaptation. Heck, if we have a rise of 1-2 volume LN series, such a practice could become somewhat of a trend.

That's a good catch, and it makes a lot of sense. Eight episodes for just one book would be too much given the length of these books, and eight episodes for two books would be very typical. Outright skipping books seven and eight is pretty weird though.
