I often find it interesting that so many mangaka hide themselves from the public to the best of their ability. I get it. Many people want to remain as private as possible, but it just seems like a larger than average number of people who create manga do so when their works become well known. And I wonder why that is. Some mangaka cultural thing?

Pretty sure it's just for their own privacy. Also, keep in mind that they spend almost every week working with few hours of sleep, and if people recognize who they are, they probably would bother them the few times they go out publicly, especially with so many stalkers out there, iirc even Oda had problems with a stan.

First thing that comes to my mind when thinking about this is crazy stalker fans. And the more popular a manga gets, the more difficult it is to please your readers. I mean it in the sense that there's always someone that hates what happens or doesn't happen to X character, and sometimes those kind of people are dangerous, so... yeah. But that's my own idea as to why lol

Is it just me or I don't see Western authors, including those who are work for Marvel and DC -- not hiding their faces in public unlike most Japanese mangakas.

Its not you, I really can't think of any comic writer or artist who try to hide themselves from the public to this degree. Most I'm aware of are pretty okay with interviews and being photographed in public.
It happens to be manga thing for some reason.

I'd say it's more of a Japanese thing than a mangaka thing. Plenty of Japanese people tend to censor their faces with sticker emojis or masks when they post photos with themsleves in them online. Probably a cultural thing about not wanting to standing out and being humble.
But I do think the comic industry is disproportionately attention seeking by comparison. Even comic writers who only sell like 1000 copies per issue act like they're rock stars or legendary icons. You can say that about a lot of American celebrities, creatives, and influencers though.
