K-ON! BDs use 24bit uncompressed PCM; the DVDs use 16bit.

DVDs actually do support 24bit PCM, but it's rare to see it. I'd imagine that's due to bit-rate and space issues.

Also, BD supports lossless multichannel/surround audio which DVD does not. Not that it's relevant in the case of K-On!, of course.
