I guess from the perspective of someone who never got into fighting games of that era? Or at least the SNK side.

SNK usually introduces system level changes from entry to entry of varying degree (but usually of greater degree than say, the fundamental system of Smash 64->Melee->Brawl). (I can't exactly speak for the World Heroes games)
Although, KoF '97 and '98 are probably the closest to each other such that to the layman they would strike as mechanically the same. The main gameplay differences that I can remember for those two are at the character tweak level that are of the sort that really only enthusiasts discuss.

Anyway, looks like this stick's line-up is entirely fighters. If you want some of the non-fighting games for Neo Geo, look into the Neo Geo mini then?

Nah, I'm totally aware of that. I grew up during that time the system was present. And I do know all about it. I was simply pointing out that the line up is kind of window dressing and even then, I wasn't really serious about it since I knew (and hopefully anyone else familiar with the Neo Geo) that the console was mainly a platform for fighting games. But they could have added some variety to it by including some of their other big hits like e.g. Metal Slug.

Anyway, I don't consider the Mini a real alternative. Including evey pheriphery you'll need to play it on a big screen (2 controllers, HDMI cable and so on), you have to pay over 200 bucks to get it done. And even then it's kind of a wonky setup.
