Whatever his final film is, it'll probably be completed by someone else and released after his death. Assuming anyone's willing to take that task on; a Dreaming Machine scenario is just as likely.

I mean, why would he stop?

Making movies is his life, and he is still alive.

He could very well live until he is 100 or older.

Is it just me or "The Final" word is being use for marketing or promotion purpose ? just like Gintama or AOT Final

Seriously, "final" has become as meaningless in the public square as "fact" and "truth." Lewis Carroll saw it coming way back in 1872:
"When I use a word," Humpty Dumpty said in rather a scornful tone, "it means just what I choose it to mean--neither more nor less."
"The question is," said Alice, "whether you CAN make words mean so many different things."
"The question is," said Humpty Dumpty, "which is to be master-- that's all. ... When I make a word do a lot of work like that, I always pay it extra."

It would be miraculous if Miyazaki lived long enough for another film to see completion given his age.

Anno will convince Miyazaki to embrace technology and upload his brain to a computer or robot. Then Anno will make a movie about the Miyazaki-bot making movies.
