apparently the manga is popular in america and japan over the past year although it just recently caught my attention

I would guess without a doubt, the show is doing better than they projected
Usually i would be turned off by shows like this but it has made me somewhat interested

For a typical production schedule each episode is readied 4-5 weeks before it airs. So for a 2-cour series, you can indeed have episodes still in production stage after it's premiered.
