In a conversation today I noticed none of us were saying "Yukari Tamura", "Masami Obari", "Urobuchi Gen". We were saying "Nanoha" "The Fatal Fury Guy" "The Madoka Guy". The conversation went to sar as to call Hisashi Hirai "Gundam Seed". Not even "The Gundam Seed Guy". Just "Gundam Seed".
So I figured I'd ask if anyone here does this. I do it entirely based on A) If I know the name and B) if the people I'm talking to know the name or care about the name.

There are plenty who don't bother to care about content from ending credits, and other sources of similar information. For me, that's too much to remember to even care.
Heck, if I listen to a song, I don't even know the music title nor who performed it - aside from Psy and Gangnam Style - and maybe few others.

And most of my contributions to the encyclopedia have just been animation studios as a whole (Primarily because I don't understand much, if anything, about Hentaigana).

I don't really have any friends to converse with about this particular subject, but around here, I usually use production studio names (Gonzo, I.G., Key, etc.) and/or the major players (Miyazaki, ABe, Shinkai, et. al.). Otherwise, I suppose I would just say, 'the guys who made so-and-so.'

I do when I remember them. Although admittedly that is not all the time. I generally remember my favorites. The people I really like. But there are a lot of other people I am aware of (especially if they've done multiple things) who's names I wouldn't know off the top of my head.

I tend to remember names of staff if I see them repeated on shows I enjoy. Junichi Sato, aka "The Aria Guy", kept showing up on several anime I enjoyed, and it couldn't be a coincidence.
Everyone else is either recognized by discussion or news, as long as they're linked to the project(s).

I try to be as specific as possible, since simply labeling artists by one of their works can cause confusion. For example calling Masami Obari "The Fatal Fury Guy" can give false impression where his specialty truly lies.

Nope. I am horrible with names as-is. Unless it's a huge name like Miyazaki or someone I'm a big fan of Yoshitoshi ABe, then the odds of me remembering their name is slim to none. I'm the same way with music; I couldn't even tell you most the people in even my favorite bands. If I remember their names, I certainly would, but it just seems I'm not wired to remember names, heh.

In the interests of simplifying communications, and not sounding like a newb, yes, I use names.

I generally use full names wherever possible when I am referring to people I admire. Among directors of television series that would include Iso Matsuo, Nakamura Kenji, Kazuki Akane, and Kamiyama Kenji. For seiyuu I usually refer to men like Sakurai Takahiro, Namikawa Daisuke, and Seki Tomokazu by their full names. Among the ladies, Kuwashima Houko, Paku Romi, and lately Tomatsu Haruka, all get the full-name treatment.
Just because they have Japanese names, and transliterations at that, doesn't mean we should refer these hard-working anime professionals by anything other than their names. Do we talk of movie actors like James Stewart and Brad Pitt as "the guy with the binoculars" or "the angel of death?" Of course not.

When it comes to multimedia like anime, I hardly (if ever) name names and generally reference the studio responsible for such works. I dislike naming one guy/gal as "the one" responsible for a particular series, unless they're the sole author/artist of the media. When it comes to books, illustrations, musical performances or anything that can be done by one person, sure. Anything else feels like a disservice to the hard working nameless/faceless people who collectively make a production work. Thus, I'll name the studio if I can.
This perspective may change though. Apparently a director can ultimately make or break how good or bad an anime can become. If there's a noticeable trend where a single person can massively affect the entire outcome of an anime because they've influence its production with their own style, then I'll probably learn their name.
edit: To add, I do refer seiyuu's by their names as much as possible since the roles they play take on an identity of its own. However, I'd like to know how much of an influence the director has on their performances and credit them too. I'm confident that its ultimately up to the seiyuus to bring out their best, but I'm still not familiar enough about how the process works in Japan.

I use the name if I know it. I pay a lot more attention to staff (especially directors, animators, and seiyuu--and mangaka, publishers, and magazines for manga) now than I used to, so I'm getting better at remembering more names. I'll say "the guy who does so-and-so" only if I genuinely don't remember the name, and if it's someone I really like I'll probably take the time to look up the name later and commit it to memory. Same as with artists and authors, really. It seems like if a creator makes something worth remembering, the least I can do is try to remember their name. It's also good if I'm discussing with someone, since they can go look up the person if I remember their name.
However, that said, I tend to be more vague with IRL friends because most of them don't pay as much attention to that stuff as I do and I don't want to weird them out too much with my geeky habits.

I use names (if I know them), and if someone doesn't know, I clarify by things they've worked on. And actually, Urobuchi has been coming up a LOT in conversation for me lately (ohai der, Gaim, starting in a few weeks).

I can't even remember their names, I use the encyclopedia here whenever I need to refer to someone and get their name, except for Gen Urobuchi who has had his name repeated a lot. If there was someone who I talked in real life about staff, I have to be vague, even with VAs, which I have a better chance at remembering.

That's basically what I do.
