I mean, I'm all for more anime getting released theatrically in the US, but didn't a bunch of the Ghibli films run in theaters this year?

Yep, and has done so for many years.

Speaking of Ghibli, a thought came to my mind a few days ago, that I don't believe I ever had before - what if San was at the time voiced by Megumi Hayashibara, instead of Yuriko Ishida?

Playing in the theaters, that's good. But will we get a 4K physical release after that? There are at least four movies I would double-dip to buy.

Same here! Castle in the Sky, Porco Rosco, Nausicaä of the Valley of the Wind and my personal favorite Kiki's Delivery Service would be day one upgrades. Of course I would update the whole lot of the movies when I had spare money.

The Ghibli Fest has been a regular part of GKid's release schedule since they got the license for the catalog. The only new thing here is that it's in 4K for the first time which may still be worth it to see with the new remasters.
