That's a lot of great artwork!
I was just skimming through it, so maybe there are other cards like it or it isn't unusual, but the Ishgard Holy See card has different (missing) text on it's two cards...

One card comes to mind, Moonmist, used to transform all humans. Way easier than doing what it asks you to do to try to transform it. Have Vanille and Fang? Moonmist to Ragnarok. Sephiroth? Moonmist to One-Winged Angel. Moonmist is a common from Innistrad and was reprinted once. Way too good for 2 mana if you ask me.
Super stoked for a few new ideas, like Mog with Lightning or some Odin shenanigans.

There's definitely some great stuff here and, as a big fan of Final Fantasy and Magic I can appreciate all the work that's gone into this.
Odin is probably my favorite so far, but seeing Intercepter makes me want to build a black assassin deck. I wonder if there's enough creatures for that...

Did they forget to finish designing the Zidane card?
For accuracy to the XI experience, Dragoon's Wyvern should die immediately and you have to wait 20 turns to play another dragon card again.

The Zidane is from Through the Ages, which is them taking a bunch of preexisting magic cards and slapping preexisting art on them (in this case, concept art from IX). Most of the cards in this style look that way or worse

The extended art version of Ishgard, the Holy See simply omitted the reminder text (reminder text is ant text surrounded by parentheses) of that rmeinds players of how Adventure instant/sorceries work. It is actually very common these days for the special alternate versions of rares to have their reminder text omitted, because reminder text isn't rules text. The fact that "Faith & Grief" has the subtype Adventure inherently means that after you resolve it you exile it and are able to play the other portion of the card later from exile.
Rules-wise, it is no different from going from:

It genuinely bothers me that the actual Final Fantasy card game gets nothing but stock art assets while this collab of all things gets all original art.

It bothers me they never took the FF TCG to a digital platform. A perfect game as a live service, which they keep trying and failing at. A video game company, that decided to not make a video game for their tcg. It is the perfect 3 in 1 cocktail they could have tried, but no.
