Surely they can accommodate all the design iterations into a single canon by stating that the body mass of a Pikachu varies between individuals. After all, their evolutionary instars cannot be the only means by which their sizes differ.

It would be interesting to see Gorochu in Generation VIII. I would probably see them trying to make a storyline in the anime in which Ash's Pikachu has trouble sleeping due to nightmares about this even more powerful evolution.
