Generally, I volunteer to do audits any time I log in, which tends to be roughly once a day. I've noticed a couple of times after submitting new themes or genres, so of them will come up the next time I do audits, but others won't show up until several days later. So I'm wondering, if the audit system is supposed to be automated, why does there seem to be such a random processing of audits?

It's does merely seem to be random, it is! There is a certain amount of randomness when assigning audits, to minimize the chance that organized spamming will be successful.
