Kare Kano because of an interesting plot which will keep you guessing in later volumes. The charecters are original and don't really conform to any steryotypes (except some of the main charecters friends which are borderline) and are the type of people you can connect with.
I haven't read any others that I would recomend.

Hana-Kimi: It's about a girl named Mizuki Ashiya, who moves to Japan to attend an all boys school (she disguises herself as a boy) to be close to her idol, Izumi Sano. Currently one of my favorite series. The characters are all endearing, and unlike most shoujo heroines, Mizuki is actually likeable. Only draw back is that it's a long series, 23 volumes.
Hot Gimmick: Another one of my favorites. The plot is super soap opera-esque, but it's a pretty addicting. The only draw back, for me is that I cannot stand most of the female characters (especially Hatsumi, the main character). The guys more than make up for it, though.
A Perfect Day for Love Letters I picked this up the other day and loved it. It's a bunch of sweet little short stories dealing with love letters. A couple of the shorts are bittersweet. I believe it's only two volumes long, so it's not a drain on the wallet. ^^

Ick, I didn't like Mars, it turns into nothing but a big rip-off in my opinion...just to warn you. Tons of people love it, but I thought the plot and characters were shallow and cliche, and the art is only so-so.
Hm...I'm not sure what to pick though. I read more fantasy oriented shoujo, whereas you're looking at realistic love stories, I think. I can and will recommend Nana and Paradise Kiss though, both by Ai Yazawa for you though. Haven't read Hana-Kimi, but I've heard great things about it. The manwha titles I.N.V.U., the Queen's Knight, and Kiss Me Kill Me. As for my own shoujo picks, I'll go with Plannet Ladder, RG Veda, and at least one title by Yuu Watase.

My three picks (speaking as someone who's favorite genre isn't shojo) would be Nodame Cantable, Nana and Kare Kano. Nodame is slice-of-life with humor, while the last two are dramas (Kare Kano being the more romantic of the two). Nana isn't going to be in paperback format for a while, so why don't you make one of your choices an issue of Shojo Beat. That way you get to sample a wide range of diffrent titles, from dark fantasy to sports drama.

For me it would be: Kaikan Phrase, Ceres Celestial Legend and.....hmm I can't seem to decide between Hot Gimmick and Kare Kano. Either of the two will do.

Like you, I find myself unable to cut it down to three. I'd pick KareKano and Kodomo no Omocha, but for my final pick I'd be at a loss as to whether to pick Aishiteruze Baby or Fruits Basket.

You don't have to buy just three. You can get four if you go to Waldenbooks. They're having a buy 3 get 1 free sale until the end of the month.
My recommendations:
Kare Kano- a sweet love story with lots of heart strings
something by Yu Watase (FY, Imadoki, Alice 19th, Ceres). She's one of the queens of manga and you can't go wrong!
Red River- an historical action series with a really good love story. It has all the "heat" of hot gimmick and hana-kimi in my opinion

Or, one last option, use that $30 to subscribe to Shojo Beat and get six series instead of just three.

Wow, almost every single forumite selected Kare Kano!
In my expierence with shojo, you really can't go wrong with either CLAMP or Yuu Watase.

I second these, but I would also add Boys Over Flowers as my third choice. If you haven't read it already (it's kinda old) then it would be a good choice. It's similar to Hot Gimmick in a way. Anything by CLAMP would do, too.

Yeah,thanks every one and no belly button lint its not cheating to put 3 from each company.LOL,Sounds like something i would do.
Thats also a great idea about Shoujo Beat.Get six instead of just three.I hope they come out with a boxset like they did with shonen jump.Just put vol. 1 in the box.That would be awsome.
Im getting Peach Box Set 1(my friends giving me $30 bucks,i love her)Hot Gimmick 1,and either Paradise Kiss or Karo K???.What one?

Hey, if there is a Border's bookstore near you, at least in my area they were having a "Buy 3 manga, Get 1 free" sale for about a week now. So that might stretch your money a little. As for shojo titles, Kare Kano is good for comedy-drama, Alice 19th for fantasy-drama. Ultra Maniac is also a good title that just came out recently in America.
