Before I watched anime, I was quite tough on people. I wasn't the person most people would have expected. I might look kind, but truly at the time, I was mean.
When I started watching anime(about 11 years old), I found out most of the characters were truly nice. They were kind, helpful, and most intriguing since their characteristics were perfect. After I finished watching, I thought to myself that maybe I should be much kinder and beneficial to everyone. Today, I would be considered as a nice person in my school. and I'm happy...
The anime that affected my personality was Fruits Basket. Tohru and yuki were the nicest people. They were so kind, many people loved them for who they were. Other anime also affected me but Im guessing that this anime affected me the most.(sorry for my grammer...please do correct me if I'm wrong).
So, what anime has affected you?

For one, personal hygiene becomes less important.
Then, you find yourself gaining weight, and losing track of the days.
And then, you stay up all night just to catch midnight screenings or openings of stores.
And finally, it becomes impossible for you to find a significant other.
But seriously...
Um, I think that anime doesn't really affect me very much. I'm not the type to watch a series and make a big decision based on it... Although I am considering studying Fashion after I finish my current degree course based partly on the manga Paradise Kiss.
On the whole, I'd say that watching anime hasn't changed me so much as the things that have happened since I've been watching anime have. I wasn't very popular in High School, but I have a lot of friends now in University, have joined an anime club, and may form my own at some point. What's more, I can't attribute any of that to anime.
I think if you're affected so much by anime, even if it is only one series, then you may be too easily swayed.

Anime has affected me in lots of ways. First off, I met all my friends though the college's anime club. I also met some other people through way of watching anime on my laptop in the cafeteria.
And just for the heck of it, I once watched a Superfriends DVD on my laptop to see how many people would make fun of me. As I expected, a lot of people made fun of me because they thought I was some immature kid. Seems like most people accept anime but not American cartoons, at least in my neck of the woods.

I've definitely made a lot of friends because of anime, through my university's club. Love of anime and manga is one of the biggest differences of my life in university and pre-university.
My actual behaviour I think has been pretty set for awhile, but I think I have a different view of the world, or at least parts of the world.

Until the crappy ending, Prince of Tennis made me more aware of the sport itself even though it goes to great lengths of making the games a lot like DBZ . After that anime ended, I lost interest along with tennis. So some sports anime makes me interested in the sport itself. I'm a 5'7" kind of guy so I'm not the ideal basektball player but Slam Dunk also got me into basektball at a time when my local team, the Phoenix Suns, were starting to heat the court during last season's playoffs.
Anime pretty much effects my other hobbies and interests. Though I had no interest in Japanese cars, Initial D was able to pull me into the anime because I was already familiar with the music being a paralist and an avid player of Para Para Paradise when I first saw the anime. So the music got met into it and I eventually grew to love the cars.
Anime pretty much has gotten my interest in Japan. I've been into anime my whole life (wasn't aware that Robotech and Voltron were animes until I knew what anime was 11 years ago when I was 10) and it eventually got me interested in Japan itself. Luckily, my local high school had Japanese classes and I was always the top student because watching anime so much pretty much motivated me to do well. I even majored it in college and I'm currently a (temporary) graduate student (until I can find a job in Japan) continuing my Japanese studies. Though not to the point that I want to be a seiyuu.
But I honestly don't know if anime really got me into Japanese culture that much. I was big into Ninja Turtles and was doing martial arts as a child so the whole Asian thing was been my interest since those days and I have those interests even now. My true goal in life is to either make it in UFC or PRIDE or a future mixed martial arts event. But themes and messages in some animes have givien my encouragement. Especially Hajime no Ippo (aka Fighting Spirit).
But anime has pulled me into what I would consider cheesy like romance through shows like DNA and Video Girl Ai. So anime has pretty much influenced my other interests and hobbies as well as my educational and professional life.

I was once a lonely kid, who didn't have nothing in common with other people until the first Anime I seen was Astro Boy, Hellsing and pokemon. I started to have all kinds of good friends. So much to talk about and stuff, upgrade eachother about upcoming Animes or movies... Etc....

Anime is really like the only hobby I can share with other people. I work at the Fire Department in my town and everyone there is like a decade older than me, so I usually just keep to myself as far as outside interests are concerned. But when I come home, I have tons of animes to watch, find more info about, discuss in forums (like here!!), and so on and so forth.
The biggest impact is that, ironically enough, anime actually gets me OUT of my house. I signed on to work at AnimeBoston last year (despite being new to anime and having no convention experience) and now I'm involved in a very fun project and get to meet tons of awesome people (plus it looks awesome on a resume and gives me personal satisfaction of being able to donate my time, talent, and energy to something that brings joy to others).
Anime also gives me a wider understanding of the rest of the world. I get to learn about Asian culture and language while experiencing incredible artwork, awesome sound effects, and intriguing storylines. I've even managed to talk my non-otaku girlfriend into going to Japan with me next summer!

Is it gone from view now? There are lots of thread like this, especially related to .hack.
How was I affected? Well, now my whole life revolves around anime and manga. This is not how it sounds, however. My ideal career changed, even though I was looking towards art in the first place. I, now, am looking to anything related to an anime news magazine or publishing company, such as TOKYOPOP.
I certainly gained more and different friends, and I'm involved in more clubs (Anime Club!). I even became publisher of our school newspaper for the interest in publishing. (I've learned a lot of interesting things in Adobe InDesign, Photoshop, and Illustrator.) There's a lot more I could add, but it might get repetitive in contrast with other posters.
