I agree that Season 2 wrapped up with a near-perfect ending, but I disagree about the first half of Season 3 being slow and only picking up afterwards--altogether this season turned out to be a pleasant surprise for me.
Basically this season existed to incorporate games from the manga that weren't adapted previously, as well as introducing a character Arisu met in the manga but not in the previous season (it's probably deliberate that the actor playing said character can speak fluent English, should an English-language spin-off actually happen). This season otherwise seems to be show-original material, and I knew it wasn't guaranteed that fans were going to love the new characters right away like in the previous seasons. Regardless, the randomness of who survives or who doesn't continues to be just as interesting and exciting here as before, the narrative payoff still felt just right, and if it had done without the sequelbait cap-off, this would've been a very nice epilogue to the main Alice in Borderland story. If an English-language spin-off has to happen (whether that's necessary or not), I actually hope it features exclusively brand-new characters, and let all our surviving original favorites just move on with their hard-earned lives.

I wonder if Squid Game was actually involved in why this was made...but as a fan of the manga, I can't say I mind it at all.

I thought this was pretty ok sequel even though the 2 seasons had already mostly covered all the manga material. I think ultimately the show works because the characters are likeable and the show did a good enough job adding in backstory where needed. I do like the old players all made a cameo by the end.
