Any Recommendations

Berserk -- Pretty violent, but a masterpiece of a story.
Hellsing -- If you like vampires and supernatural stuff, this is good.
Excel Saga -- Off the wall comedy. There is a plot regardless of what you hear, but there's not much development till the end.
Furi Kuri/Fooly Cooly/FLCL -- More off the wall comedy, but unlike Excel Saga, the plot is much deeper. It has great art and animation, and probably one of the best soundtracks out there in terms of rock.
Fushigi Yuugi -- If you don't mind shoujo, you'll like it. However it's 52 episodes long, but very much worth the endurance. Don't watch the dub, bad acting.
GTO -- My 2nd favorite series. It's so hilarious at times with just the right mix of drama in between. "Slice of life" animes are great. It's 43 episodes, but worth every second, as each one of them never bored me. This dub stinks too, don't watch the dub.
Kare Kano -- If you like romantic comedies, this is probably my favorite for now. It's very cute and very sweet in the way the plot flows together. I'm on the last disc, and I'm kind of bummed it's almost over already. Don't watch this dub either. It loses the emotion. 26 episodes.
Mobile Suit Gundam -- It actually depends on which timeline you watch. If you haven't heard of this series, which I'm sure you have, then you need to watch the UC timeline. As for AU titles, Gundam Wing is what got me started in the whole thing, so you may want to try that (49 episodes.)
Rurouni Kenshin -- My favorite series of all-time. It's 95 episodes, but as far as I'm concerned, it unofficially ends at 62. If you like action/adventure Meiji sword-fighting Japan, you'll love this. Also check out the 1st OAV licensed under ADV as the (crappy, bastardizing, but marketable misnomer) title "Samurai X: Trust & Betrayl." If you don't have a problem watching subs, then PLEASE watch this series in Japanese. The dub is bad in my personal opinion, but if you don't have high dubbing standards, I don't think it'd bother you that much.
Trigun -- Probably the closest equivalent to Bebop, but not quite. A lot of people like to compare these 2 for some reason, but yeah, it's definately something every fan has to see. On top of a decent story, it also has an excellent dub. 26 episodes.
X (TV) -- My #3 all-time favorite. One of those shows that posesses another "approaching Apocalypse" theme. Made by CLAMP, who are notorious for shoujo, but in good fashion. Excellent animation, music, story, and dubbing. I won't say much more and will let you experience it for yourself.

Most of the aforementioned titles are pretty good, and most of the stuff on Adult Swim is pretty good. If you liked Eva, you should watch RahXephon. It's another intellectual mecha show, but in this one, everything makes sense. It will forever be compared to Eva, however unfairly. Also, any of Miyazaki's films are exceptional, like Spirited Away and Princess Mononoke.
