It looks like a spiritual sequel to Yoshi's Story, which was a very easy game. So I expect this will be as well.

It’s a Mario adjacent title why would it be overtly difficult?

While true the last legitimately difficult Mario game would’ve been the original version of Super Mario Bros 2. They’re never going back to that kinda of bullshit difficultly ever again.
At most you can hope this game will have “somewhat” challenging extra stages like Yoshi’s Island.
