I decided that if I was going to read manga I would start with a title that I was relatively familiar with in regards to the anime: Excel Saga. As much as I love them (have the first 3 volumes so far), I want to move beyond that to get into other titles available in the US.
I like humor (dark, light, doesn't matter), action, horror, sci-fi. What are some recommendations that other manga readers might have for me?

As manga goes, there are a lot of options. Love Hina is a good romantic comedy, as is Chobits. For action, Rurouni Kenshin, Rave, Ragnarok, there are quite a few. I also reccomend any of Rumiko Takahashi's works. well, good luck.

Outlanders (sci-fi rom)
Akira (Sci-fi)
Dominion Tank Police (Sci-fi)
What's Michael (com about cats!)
Lone Wolf and Cub (Historic)
DragonBall/DBZ (Sci-fi fighting)
Cardcaptor Sakura (Fantasy - BUT only the re-print version)
Tenchi Muyo! (Com/Fantasy)
These are not in any particular order, just a few of my favorite titles in my very large collection

I think that moving Excel saga beyond is quite a complex, yet fun thing to do. I think that the titles that you must consider is:
Tenchi Muyo (Romance )
Dragonball Trilogy (Some serious action)
Gundam Wing (Sci-Fi)
Outlaw Star (A Bit of Hentai )
Neon Genesis (Extreme bits of Horror)
There's so much that you could do, but since I live in England, I don't get lots of anime where I LIve

NGE didn't have that much "horror" in it. It was more gore.
Try out BLEACH and Zombie Powder by Tite Kubo. They have a little bit of horror and it is dark. Also there is action in there too. Also Rave/Groove Adventure Rave/Rave Master is a good title. Naruto, which has comedy and lots of action...also for more of a horror fix try Blood:2000. There is some boobs in there, not enough for a hentai though.

if you think about it in NGE is about the end of the human race. Like someone hitting the reset button of life. If you get into the story line it will creep you out. It will all come together at the end of the movies

Try this one: RAnma 1/2 is a must if you like comedy its a whole boy slash girl thing with some marchial arts voodoo thing. And a duck/guy thing and anther guy/girl thing and another guy/pig and a girl/cat and a another guy/ creepy creature and a guy /panda and of course perverts, a tomboy witha multi-dimensional mallet, not to metion a [b]lot [/b]of girlfriends assigned by daddy dearest, plus a few more scary old crones and a weird old guy that collects underwaer(the pervert). Also try, dragon knights, vampire game, MArs(love story), NOW, the Kindachi case files and a number of others but frankly i don't know what else a guy would like to read, you could always try onegai(please) teacher, and ai yori aoshi(not if you have a girlfriend of course) but whatever read them in the store unless the keper is an evil old lady.

Humor, Action, Horror, Sci-fi?
Well Priest has Action Horror and Sci-fi..very little humor though...
And GTO has more humor than Excel Saga..I difinitely like GTO's humor far more than Excel Saga.

Action-wise, what kind of action do you prefer? If you want swordplay, stuff like Samurai Deeper Kyo or Rurouni Kenshin would be good. Gun-wise, you could always try Trigun and its ilk, which would be good for that anime-to-manga transition, too.
If you're into more dark-shoujo action, maybe X/1999 would be fun for you.
As for horror, eh, maybe you can check out Pet Shop of Horrors (althought it's... really not that horrifying at all).
There's already a lot of good suggestions in thist list, so I guess I'll stop.

Hellsing (Dark Action with a little humor here and there)
Chrono Crusade (Hellsing Lite, but still good)
Chobits (Romantic Sci-Fi)
Azumanga Daioh (Random)
Full Metal Panic! (Action and Humor)
Sorcerer Hunters (sorta ecchi, but very funny)
Magister Magi Negi (comedy, Harry Potteresque)

Reconmidations from the Captain:
Tenchi Muyo (Comedy/Romance)
Trigun (Action/Comedy (I think)
Cowboy Bebop (Action/Comedy)
Lupin III (Action/Comedy (Again, I think)
Priest (Action (not to mention one of the bloodiest manga's I've read to date)
Chobits (Not to sure what this is. But excellent otherwise.)

Satoru Akahori can be pervy, but he's pretty wild like Koshi Rikdo. I love Sorcerer Hunters, although Tokyo Pop has announced they're re-doing into in an authentic manga version. Saber Marionette is fun, but not as fun. I'd embarass my daughter reasing Sorcerer Hunters & start laughting whereever I was--dr office, fast food restaurant, etc.
I love just about everythnig by Clamp. Angelic Layer is much better in manga form--Icchan is insane & there's a running joke about guys in labcoats being weird. CardCaptor Sakura is their best for me. I like the way they always drop hints to the mysteries in the story & they always have mysteries. The art in Suki was strange, but the story was better than I expected. The Clamp School stuff is wild, particularly the Clamp School Defenders(can never remember how to spell it-Duklyon?). 2 volumes, bu by the end of the first, the writer was losing it so the heroes were getting less space for the love story involving the villain. The heroes threaten to write to complain. Xxxholic is good, although the witch is downright evil(in a fun way)
3X3 Eyes is pretty graphic, but I really enjoy it--Yakino gets turned into a Wu(something like a zombie) to protect & serve Pai whose demon side is rather haughty & rude. Early on, he thinks of her as a monster & his realization he is also is very interesting. There's lots of adventure & gore as Yakumo gets dismembered regularly & both are on a mission to become human
I'm also really getting into Rebirth. It started out fairly typical for a vampire tale, but since it's become one of my favs, particularly since it's moved into Deshwitat's backstory of hwy he's fighting his former friend Kal.
Bastard is a fun title blending sword & sorcerery & heavy metal. Dark Schneider is a lot of fun, although he tends to appear on the scene without a stitch of clothes on. Like 3X3 Eyes, it's been running since the '80's.
Demon Diary had some fun stuff. When a demon Lord dies, he normally has selected & trained a successor, but Raenef IV dies leaving no heir, so Eclipse is sent to locate the heir. There's several fun bits like a dream involving a tomato & a priestboy in training who summons Raenef to destroy him. although the old priest points out it's the demon's title so he's the hero.
