Disclaimer: No, I do not want links to fandub sites (if they exist--see the rest of the post); I think the idea is rather absurd
that being said...
is there such a thing as a fandub? There are so many fansubbing groups that somebody must have thought of doing dubs, but did anybody? (I certainly hope not, seeing as many professional dubs aren't so great.)

Yes, and they are uniformly terrible. Sometimes they're so awful they're hilarious.
The best one I've ever seen was Prince of Tennis; the kid sung over the Japanese opening, and then did all the male voices himself. He had one girl doing all the females, including the worst "old woman" voice I've ever heard.
I still watch a few minutes of it from time to time and laugh myself stupid.

I seen some on youtube for shows like Fruits Baskets and Naruto but I think those were meant to be a joke

From what I know, fandubs are usually used as jokes and parodies for anime series.

I would hope that they are meant as jokes. Can you imagine if the person doing them was serious? Realistically, there wouldn't be any reason to do them, since it's not like the company is going to buy your version or anything like that.
They are pretty hilarious all around, I have to admit.

I think most people watch them because of the train wreck voice actors who sound like they are in the showder singing when they do them.

I've seen a few, and they are invariably parodies. Neon Genesis Evangelion in particular is a favorite target. (At one time there was one circulating - I believe it was called Evanjellyon or something like that - which voiced over the first episode with very sexually explicit, humorous alternate dialogue. It's not the only series that has seen such treatment, either.)

Fandubs... The only real good I've seen in them are parodies. Some of them are pretty funny though. I enjoy watching Yu-Gi-Oh: The Abridged Series on Youtube. Casey and Friends and Breath Note are also very funny imo. I can't recall ever hearing any serious fandubs though...

Well, serious fandubs does exist, I've seen an excellent translated singing of Shuffle! theme song (to tell the truth I preferred the translation to the original) and others at Youtube. But, it's definitively mostly humoristic, and listening to you people talking about it, makes me want to go check some.

I might try my hand at fandubbing sometime, maybe doing some Latin and German dubs of some anime, and I might do all the voices. I won't be surprised if there'd be issues with that, because let's face it--certain lines don't translate well, and I'd have to make the script match the lip-sync.
And then there's some parodies I might try doing.

Fan dub? I find it ridiculously comical, so much that I come to wonder why fans continue to criticize or simply dislike merited voice-over actors. I mean, even if its for the spur of the moment, they do realize their voice or impersonation of a voice is not even at par in comparison to a standard VA (IMO). Again, very humorous, yet sad.

I recently met someone who (apparently) sincerely believed that some horrendous fandub of Kiki's Delivery Service was better than Disney's. It sounded like my eighth grade drama class that was so catastrophic that I have never again returned to the stage, prefering to stay in the put where I can singlehandedly drown out any of the queen bee sopranos I have run accross. LESS TROMBONE! Not likely.
I put her on the "don't ever trust about anything because she's obviously delusional" list.

Aside from stuff like parodies, the only serious fandubs I've seen have been fandubs of PGSM and Sailor Stars. The PGSM fandub was horrible. None of the voice "actors" had any sort of acting talent at all and they all spoke way too close to the microphone, so you could hear their breathing the whole time and all the names were badly mispronounced. Usagi Tsukino was mispronounced as "You-saw-gi Tuh-sukino", Naru was mispronounced as "Nuh-rooh", and Ami was mispronounced as "Amy." The Sailor Stars fandub wasn't too bad, though. It was interesting to say the least. They used the dub names and the DiC BGM and they made Haruka a man, but otherwise they kept the script pretty faithful to the original and nothing was cut out and their voices for Ami and Luna actually sounded pretty close to their DiC counterparts.

I find it quite amusing really, since attitudes like yours are quite expectingly doing fan dubs, let alone look foward into trying. Alright, maybe I'm going out in my own way to say such criticism, but let's be real, this sort of trend does imply to all those who ever once bared the thought of voice acting. I mean, I've personally met people who "couldn't careless" or "won't waste their time" on such things to say the least, but honestly, half of those people (or more) are all talk, and more voicing. So yes, so comments like these wouldn't surprise me if the person is obscurely doing fan dubs, or atleast thinking otherwise.

I've seen a couple for Bleach that were done seriously; of course that didn't make them any better. Well, by "seriously" I mean they weren't done as parodies. If anything, they were more like something just for fun.
But, the fandub is a rare thing.
