It hasn’t been that long since the last season, and unlike Kingdom, Vinland Saga is monthly. I wouldn’t be concerned.

What seasons are worth watching? I remember hearing that the early seasons had very iffy visuals.

S3 onwards is worth a watch I'd say especially since it covers the best arc in the series thus far imo. S1 & 2 are the ones I've heard bad things about.

It's just season 1 imo. S1 uses mostly CG animation that's pretty bad, but as an adaptation it's fine. Season 2 has a lot more sauce since it's more 2D and I think the director understood the vibe better. I actually like the designs and artstyle of season 2 a lot more than season 3
