Oh wow, I didn't know he works digital like that, his drawings always give me a handdrawn vibe, especially his color spreads as he often uses pastel colors and you can see like flowing color and everything.

I didn't know Oda worked digitally; it's also interesting to see how loose/"messy" his linework is. He reaches a point he's satisfied with and just dives into inking and colors. It's fascinating to see how different artists have such diverse techniques to reach the same general conclusion.

^ You two clearly missed the last paragraph that quotes Oda saying production on One Piece is analog.
It seems like he’s using digital for preliminary sketches and testing idea, which is pretty common for artists. Nearly all of his finished work is most definitely drawn by hand. You can even see him insert the finished lineart during the video.
