What are people's thoughts on these North American created manga anthologies? Is there any anthology missing from the list below I have?

In my opinion I only see manga as comic and I don't see any point calling it "American manga" because it would just mean American comics.

Outside of Japan the words anime and manga commonly refer to japanese works and don't tend to be outright translated. By calling something American Manga would instantly recognize it as an American comic book done in a japanese style and not just a comic book with a fancy name. Calling them AmeriComics certainly wouldn't give much insight on what the book is about.

The only manga anthology I read is Shonen Jump and I love it. It gives you a chance to read comics you probably never would have heard of otherwise, and it's the deciding factor for which SJ graphic novels I'll buy.

Well, as long as they're entertaining, affordable, and wanted, yeah. If not, no. Isn't AmeriManga currently on hold due to IC. Entertainments financial problems?

I've got the first five issues of AmeriManga, and they were okay, I guess. The artwork was sometimes sloppy and the writing obtuse, but it was, well...okay. I don't think that any of these pubs will challenge Shonen Jump or anything, tho'.
