What I find perplexing about this series, is why none of the 'transplantee's', for lack of a better word, question the citizenry about how they got there. The escort guards in the beginning were 'knowingly' old hands at this, considering their reactions. The party themselves know parts of their old life, so you would think there would be questions to be asked. Sooner or later the series needs to address either the constant brainwashing or the tamping down of their memories. Right now I have a dim view of the people of this world, for they seem to be in on this.

Choco, why was she even brought into the series. She was clearly spoiler[Haruhiro's girl friend in the previous world. ] A fact that Haruhiro acknowledges. But killing her off precludes any use of her in solving the mysteries of why they are there, and why the people of this world want to keep all of this a secret.

Choco was never his girlfriend, but definitely the girl he loved.

Volume 3, end of Chapter 12:
"Listen, I... For a long time now...
For as long as I can remember, I've loved you, and only you.
I can't say it, though.
I'm sure I'll go my whole life without ever sayi-"

Though I get what your saying. It seemed weird from the get go that no one seriously cared about solving this underlying mystery. Them not being about to remember is definitely a factor to it. Volumes 6-8(8 being as far as I've read), especially 7, touch on this subject a bit. It's just weird that its taken so long.

Is it weird that I just can't get into this series due to how it includes dumb fanservice(Oh look! a sexy witch like in every other JRPG!) while trying to take its serious story seriously?

If you read the book and your takeaway was "oh look a sexy witch," then no, it's not weird that you missed the point entirely.

I'm sure somebody has asked this question before, but how many of the novels are covered by the anime? If I want to read the story, but not the parts I've already seen on TV, which novel should I start with?

Thanks for your help.

He doesn't seem to have any romantic feelings for any of the females he knows (or males, for that matter)...

I would say Haruhiro's obsessing over Merry's relationship with Kuzaku suggests that the author, at least, sees some romantic feelings between him and Merry, even if Haruhiro isn't fully aware of it. Merry, in her own reticent way, also seems to return his interest.

The anime covered the first two volumes of the LN. You might want to start near the end of Volume 2 tho, because the anime omitted the introduction of Soma, the strongest volunteer soldier, and the announcement of him forming his new clan, The Day Breakers, which plays a big part in future volumes. That and Team Renji's fight with the orcs that attack Alterna near the beginning of Volume 2. You can skip this part if you want, but its a pretty cool scene showcasing how badass Team Renji is. Besides those two things, the adaptation was on point.

Perhaps you have a point there, though, spoiler[they seemed to be together when they departed their old world, but apparently didn't arrive together during the same time period. It would seem to indicate a deeper closeness. But who knows, the flashback scene could have been misleading, but would seem to indicate that they were together in some form, otherwise why have it in the show.]

As to the other stuff, yeah, we are deep into the series now, but even though they know they are not being allowed to remember stuff, but they remember not remembering. And they keep being pinged by knowing words that are not part of this world. I can see the author wanting to keep the mystery going, but he is in danger of making his characters unrealistic, which he is skirting quite close too.

If I'm allowed to say, rather than characters not realizing the gaps in their own memories, I think what's more unrealistic about Grimgar is the number of weirdos Haru and party just seem to meet. I think they almost always get involved with weird people, regardless of whether the story is being serious or not.
