I find J-Pop, J-Rock, J-Whatever to be quite crap, and far outside my canon of musical tastes for me to consider listening to it outside of the anime that accompanies it.
Except for Cowboy Bebop, of course. "Gotta Knock a Little Harder" from Knockin' on Heaven's Door has been at the top of my playlist for the past month or so.

Aw hell, why not!
J-Pop:
Scream "N00B!" or "Fangirl!" at me as much as you want, but...
All of the Satou Akemi stuff from Fushigi Yuugi TV and OVA
Koi no Tenshi Maioirite - Love Hina Xmas special
Tenshi no ... something - Perfect Blue
J-Pop Ballad:
Towa no Hana - Ai Yori Aoshi
Toki Ni Aiwa - Utena Movie - Masami Okui
Fruits Basket - Fruits Basket
J-Rock: FLCL Ending
J-Rock Ballad:
Blurry Eyes - DNA^2 - L'Arc~en~Ciel Jazz:
Hellsing intro
Classical:
Rurouni Kenshin OVA (old ones)
VHD: Bloodlust - that one song that plays at the end when the castle is flying away
Hoshi no Koe
Electronic/Dance/Eurobeat:
Extrication & Infinity - Lost Universe - Hayashibara
some Initial D songs
Other/Alternative:
Komm Susser Tod - End of Eva - Arianne
Ultra Relax - Kodocha - Shinohara Tomoe
Well, at least those were the only ones I could think of, so they may be a gross misrepresentation of what I really like.

I think anything that features Maaya Sakamoto or Yoko Kanno is just great. That very childish voice of Sakamoto, is just sooo cute. There is a webpage (which I can't remember now), which has downloadable videos of good quality, where Sakamoto is doing voice acting. Great stuff.
The best Sakamoto anime songs would have to be "voices" from Macross plus, or the opening theme "Kiseki no umi" fom Record of lodoss war.
In my mind Kanno's best work (not including the songs she did with Sakamoto) would have to be the songs on the Cowboy bebop soundtrack.
I also enjoyed the soundtrack of Noir, which has less vocals, and more instrumental music.
Finally a small plus to Megumi Hayashibara. Not only for a great career as a seiyuu, but also for a very confusing song in Eva, called "turn back time". If you have seen End of Eva, and you know where this song comes in, you understand my point.

Wow, big mistake there. It wasn't Hayashibara's song in Eva, but Shiro Sagisu's. Great piece anyway (and very disturbingly positioned).

Wow, I really need to get my head fixed. That macross song is Kanno of course, but that Lodos war song is definately Sakamoto.
I should porbably cut down on the biiru, and get the hell out of this thread, before I get thrown out for presenting false facts.

Ah yes, that would be the infamous "Komm Süsser Tod" (Come Sweet Death) written by Shiro Sagisu, with original lyrics by Hideaki Anno himself, and the English lyrics sung by Arianne.
It's a great song, isn't it?

I'm not sure of the song's name, but the intro rock song on the US dubbed Berserk DVD's is pretty darn cool. I also like a song from the Escaflowne movie - I think it's called Sora. Just Communication is a good one, too. And the 2nd ending credit song from Inuyasha - Fukai Mori - I still sing that one in the shower once in a while.
But my favorite J-pop song isn't anime related. It comes from a drama TV show I used to watch in Japanese class back in High School. The show was called The 101st Marriage Proposal, or something like that. The opening theme song was Say Yes, by chage & aska. That song rules.

Hmmm...these are in no particular (dis)order...
- the opening theme from Neon Genesis Evangelion...not my style of music but somehow it always manages to send pleasant chills up my spine
- both the opening and ending themes from Ah! My Goddess. Again not at all my style of music but how can you possibly hate such happy music?
- the "clock melody" from Noir.

I'm sorry, I'm not following the rules here . Also, a lot of these are pretty simple...
But, I MUST mention:
"Green Bird" - Cowboy Bebop
Beserk Op. and End.
"Hybrid Rainbow," and "Blues Drive Monster" - FLCL
Babbit's counting songs - Kodocha
Kare Kano Op. End.
The .hack songs
Totoro Op.
Ranma Season 1 Op.
Azumanga Diaoh Op. End., and the short movie ending
X op. from the movie
Kazemakase Tsukikage Ran Op.
"Boy meets Girl" - Daa! Daa! Daa!
"Sunny Shiny Morning" - Maison Ikkoku
"Summer Side" - Kimagure Orange Road
Lupin 1st TV series Op.
Urusei Yatsura Op.
Love Hina Op.
"Run Run Run" - One Piece
"Sobakasu," "Junjou Na Kanjou" - Kenshin
I'm sorry, I think it's amusing to mention: the orignal Japanese Poke-Rap. Also, the original Hamtaro opening...
Also, when looking for fandubs, I came across a fandub of some Digimon episode. I am not a Digimon fan, but I would recommend this fandub rendition of the opening theme "Biggest Dreamer." It's embarrassing
