So it seems that the Warsaw Philharmonic is the anime version of Michael Kamen's "Rock 'n' Roll Orchestra," in that they're pretty much the biggest players for orchestral scores in anime. Are there any other oft-featured ensembles out there?

The Czech Philharmonic Orchestra did some awesome work in Jin-Roh and Macross Plus, and they also recorded an album of Princess Mononoke music (though it wasn't featured in the movie). Other philharmonic orchs from Israel and Moscow have made occasional appearances, and I'm sure a number of orchestras in the Tokyo area have been used from time to time.
But to my knowledge, no other orchestra is as prominent in anime music as the Warsaw Phil. Not even close.
