I noticed that they changed the Shonen Jump X mark back to that buddhist symbol...Why? Don't they care about the people who subscribe to the magazine and have no need to buy the graphic novels? WHY?! WHY?! WHY?!

Part of the problem is that the magazine and the graphic novels are handled separately. The people in charge have different ideas about what to keep in and what to edit, which makes sense because the publishing industry itself has different standards for magazines vs GNs.
Viz is pretty darn inconsistent though with what they do or do not edit and occasionally they seem to change how things are being handled for a title on total whim.
Also, from a business standpoint, Viz wants you to buy the GNs rather than the magazine, because they make more money off of the GNs. (From a consumer standpoint, you get more content and a far higher "life expectancy" with a GN, so it can be a win-win situation.)

I don't buy the magazine, so personally I was overjoyed and very surprised to see the manji intact, I never imagined they would do it. I don't know how much it is a money making issue - I honestly don't think that many Shonen Jump readers care, whereas more mature fans who only buy the tankobons would. Me - I'm just grateful we get an unedited version.

SJ's only existance is to be a placeholder for Freebie Yu-Gi-Oh Cards. Or whatever TCG related to SJ is currently pumping out.

I've been a bit disappointed with Shonen Jump lately. They edit it so much more than they did during their first year. I was recently reading some of my old issues and thought to myself, "Wow, I can't believe they left that in there!" I suppose it's because they've attracted a younger audience, but I don't know...

I bet that was one of the reasons they chose Gintama to add to the magazine rather than Bleach. I remember them considering Bleach as an option a while back, but with its popularity on Adult Swim, it apparently can sell well enough on its own.
As for the addition of Yu-Gi-Oh! GX, I just skipped right through it the second I saw it in there. Just what we need; more Yu-Gi-Oh!

Those edits are to make the magazine more "acceptable" for children while still trying to project an image of being mature. In common tongue such would be known as a "marketing gimmick".
Regarding the changes, the staff who edit the Shounen Jump magazine are the same as the volume, but the volume's chapters are finished first and then edited down for the magazine. This was done in response to VIZ Media losing its partnership with Scholastic when parents complained about occultism in Naruto and Yu-Gi-Oh.
