Hate to be that guy, but Hollywood has been doing reboots since the 30s. Look up how many times dracula or the phantom of the opera has been made. So, in a sense, you're right. Hollywood will be doing reboots of reboots because it has been doing it for so long.

being real serious here: what's the appeal of things like this series and the Saw movies? Is it that fun to watch stock characters get killed off in gruesome ways?

I think the Grudge is a bit different to Saw. Saw is torture porn, whereas Grudge is horror with psychological thriller elements (I think? Like, finding out who the ghosts are). I don't think the body count is generally as high. Saw's horror is in watching people die in brutal ways whereas stuff like Grudge is more just jump scares (like the guy's head getting grabbed as he's looking over the bath in the trailer) and menacing music.
Of course, that depends on the adaptation... I know the Ring American movie was more schlocky than the Japanese version, so they may up the death and gore levels here too.

The Saw franchise is about revenge taken in a form of horrific torturous gameplay. Pretty much the villain in Saw (aka Jigsaw) manipulates his victims to choose answers in a life or death situation. Jigsaw chooses his victims with similarities of their sins in a place for them to pretty much survive to escape.

The Grudge (the original JP films) is about a vengeful spirit who died after being murdered by her abusive husband in her attic. Her son was also never found (presumed dead) and their cat was microwaved. Her rage of being murdered turned her into a spirit who curses anyone who enters her house by death.

Both movie franchise are completely different in terms of motif, but the appeal of these movies i find (since im a huge fan of both franchises) is the backstory of it. Ofc the American rrmake of Ju-On is poorly portrayed making the Grudge appear more zombiefied than her being an actual vengeful spirit, but I guess its just the thrill of the story and how its portrayed.

think there's a misunderstanding there. I have seen all the Saw movies and original Ju-On movies up to Black/White Ghost.

I'm just saying: While they have their own flair and cool quirks, they inevitably just lead to one and only conclusion where everyone dies accomplishing little to nothing. There's no thematic weight or greater meaning, just a bunch of hapless civilians marching towards death. And most of the time they die so fast you don't even develop any reason to care for much than how they WILL die.

Do people not mind that stuff as much? It just gets boring after the first few movies.

About these japanese horror movie adaptations like Ringu, Ju-on aka Grudge, Dark Water, among others... they were originally japanese B movies. If you watch the original japanese movies, the most noticeable thing is how they lack a bunch of sfx, complex make-up and whatnot. They appeal way less to shock and horror tactics, despite still have some jump scares and whatnot.

Some of the core appeal comes from japanese lore... I guess this is kinda why they felt a bit different from Hollywood horror movies and caught on somehow.
At the same time, Hollywood adaptations always try to translate the japanese lore elements into something that would be more... tangible or relatable to a western audience, so it ends up kinda losing or missing some of the point there. Most notable, I think none of the adapted titles preserved the original endings.

The common grounds go around people who died horrible deaths or suffered and were tortured until death becoming vengeful spirits and whatnot. But there are some significant differences in how western cultures sees these things versus how japanese culture does.
I don't particularly like these movies a whole lot, but they are very interesting study cases on how movies gets adapted by Hollywood for a western audience and all... from characters, to themes explored, to how they end.
