I'm kind of curious how a One Piece novel would read considering how visual the series is.

I enjoyed the two Ace novels that were translated in English myself. The first book had lots of original content. The second one mostly went into things that happened in the manga and the anime, just with way more detail and with the perspectives of a lot more characters in the narrative. I imagine a film adaptation would be something like the second book.
Hard to say though, sometimes movie adaptations change so many things they almost become a completely different story. Off the top of my head, the novel for the "Death Note L Change The World" live action movie is a very different beast compared to the movie.
