I used to always think that anime was pronounced something like "anna-may", but after watching subtitled anime where the word anime is mentioned, it sounds more like the Japanese are pronouncing it like "ah-ni-meh" or something like that. I've also heard two different pronouncations of the word manga. Some people and Manga Entertainment pronounce manga with the man in manga rhyming with man, but I've heard other people and even ADV pronounce manga like "mon-gah" (with the man in manga rhyming with mon) and that sounds more like how the Japanese are pronouncing it whenever I hear the word spoken in subtitled anime. So, what am I wondering is how exactly do you pronounce the words anime and manga? Or is this a case where you can pronounce anime and manga in either way like how the word vase can be pronounced in two different ways?

It depends who you ask. I have heard all of those too and do not really care how someone says it as long as I know what they are talking about.
But the Japanese pronunciation of anime is a-ni-me (as in Ah-knee-may) and manga being mahn-ga. At least, that is what I am hearing from Sensei.

When I pronounce anime I say anne-e-may. Pretty standard. My friend pronounces manga as man-ja. I don't know why since there's no "J" in it but whatever.

"j" is definitely wrong...idk where they get that idea, considering that there aren't any words in English that have "soft g" before "a"...
Anyway, the Japanese "a" is pronounced like the English "a" of "father," and the "i" sounds like long "e" or the "i" in "machine." So, coldfusion is right...we as English speakers have a tendency to pronounce "a" appearing before nasal consonants like m/n as "æ" (the sound in at/am/an), though I think this is more common in American English.
As for actual conversation, I must confess that I pronounce "anime" as [æ-ni-me], even though I usually try to use correct pronunciation for any foreign words. It's easier to understand, and honestly, it can sound a bit pretentious to say it "properly" in casual settings. I do say "manga" more or less correctly, however.

I'm willing to bet that this is phonological contagion from Italian mangia.

Yep, [MAHNG-ga] is correct.
For good measure, it should be pointed out that some Japanese native speakers nasalize not only the syllable N, but also syllables beginning in G, so that a considerable subset of native speakers would say [MAHNG-nga].

Whenever I talk in Japanese, I say it [ah-knee-me]. If I say it in English, [a-kni-me] (I don't know if that's correct)

The pronounciation of anime is "ani-may" while manga,
"mang-ga" in english. Everybody has their own pronounciation and it depends in the language of the person.

I'm the same way. I try to pronounce foreign words as they are said in their original language, but I also say [æni-me] and [mæng-guh]. I think that is just habit though, as that's how I first heard the words said.
