What does PS3 add to this exactly? HD graphics and maybe 3D characters? wish these type of games weren't so popular in Japan then we might actually get a real game to play for alot of these shows.

Then again though perhaps we wouldnt get anything at all

Mainly the HD graphics on a large screen.

That's exactly what you would get. Notice that shows that can justify a more typical style of game tend to get them, such as Accel World and SAO. Exactly what else would you do for OreImo, Haganai, Toradora, and similar such shows that get VN adaptations?

But, a "choose your own adventure" game is still a game.

And adventure game would be pretty cool - something in the vein of old Sierra or Lucasarts titles.

Unless there's the element of chance, we consider them literature; that's why "visual novel" is an apt description instead.
