I realize this is not an exhaustive list, but these are the shows I think are most mentioned by fans. Feel free to add suggestions in the comments. By the way my choice is Showa Genroku Rakugo Shinju.

I'd actually love to see multiples out on disk, but Carole and Tuesday was my pick. This show is one I'd definitely watch over and over again on disk, the feeling it left me with was generally joy, the music touched my soul as music is wont to do and the characters were perfect, this show just elicited many emotions from me and I'd board this train again.

I also am jonesing for a Hikaru No Go complete set. I have seriously cut back on how much I buy over the years as so much is available digitally, but sometimes I just really want the disks.

Even though it was already two years ago, it seems so weird that Carole and Tuesday actually was from the last decade!
