Actually that's untrue as he's stated before that he would love more seasons espeacially considering the general plot doesn't start until volume 3. I think Hataraku Maou sama just had the misfortune of airing at a time when there wasn't a big push for sequel seasons to light novel adaptations.
As for the Covid delay, I expect the afterword of that novel to mention how crazy he's been getting due to quarantine

Maybe now it is reaching a finale they may do a second season. considering the older material getting sequel seasons, and this will have a complete story, it may get picked up again
