Well, I haven't seen it myself but I have heard Violence Jack is pretty well....violent. Berserk has a good deal of blood and gore in it, but the killing is on the battlefield; very few personal and detailed deaths. But Gantz doesn't hold back in detailing any deaths and naturally contains much gore.
This should answer your question, but don't be surprised if people criticize this thread, for the you asked a simplistic question with little of your own input. I would suggest using the search feature and looking up violent/blood/mature next time and finding titles that suit your taste that way.

Elfen Lied is by far one of the most grusomely detailed Anime I have seen. Limbs being ripped off, decapitations, and eyeball poking (Hehe).
Next in line would be Gantz. They dont leave out any detail in the deaths in the series.

I agree Elfen Lied is an extremely violent anime. There is also Hellsing having its gore factor up there pretty high, especially when the freaks are getting there heads blown off. There is also the classic Evangelion which has a lot of blood and same with the movie (End of Eva). Gungrave might be considered pretty violent in some spots but same with the bloodshed in Bleach. Hmm don't know anymore then that. Those are the most violent anime series that I can think of off the top of my head.

Anything Go Nagai does, really. The Devilman OVAs and Getter Robo Armageddon are both pretty high on the splattering animation cels with red paint.

As far as violence goes, Gantz, Elfen Lied or anything made by Go Nagai can't compare to Urotsukidoji. Even though it's a hentai title, it's so violent, it makes Fist of the North Star look like Sesame Street.

Well the question is kind of vague, are you defining violence by the about of gore that is in the scenes or by the intensity of the fighting. If you are defining it by gore I haven't seen to much but by intesity then I would say Escaflone the movie. Some of the scenes are extremely intense in the passion and psychology of the fighting.

So even with hentai it'll still be a bloody road.
Yes, Elfen Lied is a gruesome anime. I think heads fall off at a little too fast of a rate. Though I heard Bible Black was a pretty bad one also.

The most violent anime I've seen yet is Kite. Yeah, I've read somewhere that some scenes were cut out even here in the U.S., but you wouldn't know that by looking at it. Other violent anime I've seen are Tenjho Tenge, Ikki Tousen, Devil Lady and Cowboy Bebop.

The most violent anime that I have seen have one thing most in common: they are hated by anime fans.
These anime are Apocalypse Zero and Ninja Resurrection. Though I didn't mind Ninja all that much, it is the most hated anime on this website. As for Zero, there is no justifying reason to see it, even if it has extremely gory scenes.

I can easily pick Gantz and Elfen Lied as the two most violent animes (I have) ever (watched).
Elfen Lied is my favourite anime tho, and I think the violence makes the feelings it gives you stronger. On the other hand Gantz depends a lot on the violence (and nudity), because it lacks a really good plot (imo).

I would have to say that Apocalypse Zero is THE most violent piece of animation I've ever seen.
Granted, Fist of the North Star, Urotsukidoji, and Devilman are all violent anime. However, the violence in those series were neccessary in order to further the plot.
However, the violence in Apocalypse Zero is so exagerrated and gratuitious, that its absolutely trashy!

I would say Angel Cop, but it's really not long enough, so the amount of gore in something like Elfen Lied or Gantz surpasses it. However, Angel Cop probably has the most detailed and grusome deaths I have ever seen in anime. Especially for its age.
Megazone 23: Part II and Crying Freeman are also worth a mention.
And now that I mention Crying Freeman, I think that might have one of the highest violence factors I've ever seen. Freeman is so ridicously skilled at killing large groups of people while holding a knife between his toes it isn't even funny. Or rather...it is really funny. Which reminds me of why I love Crying Freeman so much...lol.

pumirya, you need to explain your answers better. Listing without comment isn't allowed here.
Sorry, but I must disagree with you, Ucnslowdnce. Angel Cop is graphically violent, but it's not even close to being in the same league as Elfen Lied (my pick for most graphic title of 2005), Gantz, or Apocalypse Zero. Heck, Elfen has as much intense graphic violence in its first seven minutes as AC does in its whole six-episode run.
For non-hentai titles, Fist of the North Star is still a worthy old-school pick with all its exploding body parts, while the non-hentai version of Kite is a top pick among more recent titles for much the same reason.
I'm quite surprised no one has yet mentioned Ninja Scroll, which is arguably the most intensely violent anime movie ever. (One bad guy rips both the arms off a ninja and drinks the blood which drains out, and that's just for starters.) Ichi the Killer Episode 0 is also way up there on the violence quotient - but what else would you expect from the prequel to a live-action movie called "the 'Citizen Kane' of arterial blood spray movies"? (I kid you not.)
The original Ghost in the Shell also rates high on being intensely violent, though it only has a few scenes that are especially graphic. Same with End of Evangelion.
