This feels like a big slap in the face, to us Switch owners, remind me of when mass Effect 3 launched on Wii u, while the whole trilogy was released at the same the time for the same price on other systems

Not really a fair comparison. For one thing, we don't know for sure if the Switch could handle Dark Souls 3 (it probably could, but we know it couldn't handle RE 7 and had to resort to streaming-only for that title so it's possible) Furthermore, ME 3 was the conclusion of a story-connected trilogy and decisions you made in the first two games would affect what happened in the third, so the Wii U only getting 3 felt pointless. Switch only getting Dark Souls 1 is nowhere near as pointless an endeavor.
Besides, it's not like PS4 and Xbone owners are getting anything new, Dark Souls 2 and 3 have been already available on those systems beforehand. DS players most likely own all three games already and can skip this anyway.
