Hello so im very new in this field, I've collected alot of Gundam models before an I know depending on their size an grade determines how high of quality they are. So I was wondering do figures go the same way an whats their diffrences?

Hi, welcome to the absurd money sink that is figure collecting .
Anyway to answer your question, I think the easiest way to measure the quality is look at what company is making it and look at the quality yourself in pictures. Any of the big name companies (Good Smile etc) should have high quality figures but it depends on if you like the way it looks.
Generally i do not think that size reflcts the quality as you could have a large figure that looks unrefined. It however will significantly increase the price of the figure.
Although it may sound like im contradicting myself, price seems to be an easy way to judge the quality of a figure imo. For example if you're paying for a 1/8th PVC you can expect to pay 60-80 dollars (not considering importing, tax, conversion) etc. So if you're paying for a 100+ dollar 1/8t PVC it bettr be a pretty darn high quality figure.
Also please take a look for the "official figure thread", it's either in the anime section or the retail. That will help you out a lot and people may respond quicker and more attentive there.
