Its just about to start a new backstory arc. My guess is the mangaka wants to make sure its plotted out correctly as its pretty easy to dig plotholes up when backstory diving!

I imagine that the behind the scenes work for the anime probably doesn't help either.

Indefinite hiatuses are almost always health related hiatuses. Frieren author was already pretty clearly struggling with plenty of breaks and even a small hiatus not long ago IIRC.
