I've watched the first three episodes of Ouran high school host club and i really like it! - but apparently (after consulting the encyclopedia) there's only one more episode... please say that there are more!? Could it be that only the episodes that they know the names of are displayed?

There are more episodes so don't worry.
Besides those are the number of episodes that are available at the moment; it will add up once more episodes are broadcasted. |

In general, new/ongoing series don't have the total # of episodes listed on ANN, so "We Have 4" means that they have 4 titles. For complete series, you'll see something like:
Cardcaptor Sakura ..... Episodes: 70 Episode Titles: We have 70 (and then people come in and ask, "hey hwo can i downlode thos 70 episods taht u guys have????  "  )
