I've always wanted to listen to audio commentary from the cast and crew for an anime, though unfortunately those usually aren't included or subbed legally .

They're not usually subbed illegally either. I suppose most Western fans aren't interested.

I don't think fansubbers are willing to spend their own money and/or time just for audio commentary. As for legal side, it's more like publishers has to pay extra money for those commentary tracks as they are separate from usual license deal.
