This was a question I've been wondering, at the end of every show you see something like "Paranoia Agent Committee" or "Production EVA". I was just wondering what is the point of these committee's/who do they consist of

I always wondered what this meant too but my educated guess would be that it is the name given to the commitee that writes and animates and basically creates the whole series. Well thats what I think and it might not be helpful but you can always try Google.

The temporary consortium of production companies and studios. Some with the generic "XYZ Production Committee" name, some with specialized titles e.g. "Kanto Magic Society" for Negima.

Some have humorous names based on things from the show, like Full Metal Panic's "Jindai High Production Committee/Mithril," which leads to Tessa threatening to shoot cruise missiles at anyone violating their copyright. (And for teh love of some divine entity, it's "committees," not "committee's.)
