i've been reading since the very beginning and it seems like Ichigo's only done his actual job like once in the entire story.

That one time (he does it like 1 or two more times I believe) was just used to explain one of Ichigo's responsibilites as a death god. After that, it just goes into hollow killing adventure mode for a while.

I'm not exactly sure where the North American releases are, but you definatly get your fill of Shinigami after they all decide to visit Soul Society. In fact, it gets kinda bland with the constant Shinigami fight after fight for a while, but the story gets better with it then, and they get in depth on how the Shinigami actually work.

The North American release is up to volume 12, which is well into the Soul Society arc. If someone is keeping up with the releases, they have seen plenty of Shinigami/Soul Reapers. However, the really big fights haven't begun yet. Ichigo encounters Kenpachi in the most recent volume but the fight hasn't actually started yet.

Did anyone notice that in the manga they refer to people like Rukia as a Soul Reaper, but in the anime, they call her a Death God? What's the deal with that? Is it just a different translation by Shounen Jump?

Yeah, that's just how Viz decided to translate it. In Japanese they are called Shinigami which literally translates to Death God.
They probably went with Soul Reaper (which I personally don't mind) because a Death God isn't a very good title for them. They don't deal with death, but rather souls after death, so Soul Reaper seems like a more appropriate title.
