I'm pretty sure that to pick up from what the anime leaves off, you should start reading from volume 36.
Any online retailer covering books or stuff of the sort will have the Inuyasha manga, like amazon.com. Unfortunately, the English version manga only has the first 23 volumes out, so we're still a ways off from where the manga picks up.

Yeah, Viz's releases for Inu-Yasha are very slow, so it'll be a while until we're into the 30's. However, you may actually want to read from the beginning, as it can be a rewarding experience. There are many subtle differences between the anime and the manga. Many characters are portrayed in a different light: Kikyo and Kagome, especially, are much more interesting characters in the manga. Kikyo is far less bitter and more sympathetically portrayed, and also the manga sheds some light on her motivations, which the anime often fails to do. Without the anime's filler, the pacing is much better in the manga, and certain aspects of the story are explained in-depth. The manga tends also to be much closer to Rumiko Takahashi's style of visual horror, as it is often fairly graphic. And from what I've heard, Kagome and Inu-Yasha's relationship develops at a different pace than in the anime.

You could pick up the manga in any Waldenbooks, Borders, and maybe even a few comic book shops as well.

I'm not too sure if you have these stores there, but Chapters and MacNally Robinson Both carry large amounts of mange for a general book store. Come to think of it, i read alittle time ago that a MacNally recently opened in New York.

If you have a user account on eBay, you also can find sellers offering used copies of the English-language manga, as well as the volumes in Japanese. With a little patience, you can find some really good deals on these volumes.
And you should read the manga from the beginning. As noted above, the character relationships develop at a different pace in the manga and the whole background of the characters and their story is filled in more thoroughly. Plus RT's original artwork itself is enjoyable to see. It's the same general story but with a lot of differences in the details and order of events. Plus you don't have all the anime filler to get through. (^_*)

While we're on the topic, does the Inuyasha anime actually come to a conclusion...or is it just waiting for more volumes of the manga to come out?

The Inu-Yasha anime doesn't have what you would call an ending... In the final battle, they don't kill Naraku. So yeah, they're waiting the manga out before they wrap it up properly with an OVA or something.
