Not sure if already aware and playing around, but just in case: Miss X, who is literally Iori in drag (and denying it) is the final boss of SNK Gals' Fighters on the Neo Geo Pocket Color (from 2000)

But the could be more creative, you have Yuri in a SNK all female fight game, they could create MISS. KARATE.
