I have a question that my sister brought up about Inu-Yasha. How can they complete the Shikon jewel if the one shard is still Sango's back? Or did they take it out already?

They took it out already.
When Sango learned that Naraku (who was really a demon puppet) had deceived her, she tried to attack but the shard fell out of her back, making her immobile. The demon puppet picked it up, but Inuyasha and Miroku killed it and recovered the shard.
Here's a question for your sister:
Where did Inuyasha get the Tetsusaiga's sheathe?

I thought that it was probably just given to him along with Tetsusaiga.

See, when Inuyasha got the Tetsusaiga, there was no sheathe. He just pulled it out of the rock and started attacking Sesshomaru. Plus, even if the sheathe was near the sword, Inuyasha jumped up and left the grave, and did not return for it. The sheathe just kinda... appears later.
Here's a theory. The sheathe just appears to the 'rightful owner'. I mean, look, the sword gets bigger/powerful for the owner, so why not? Since Inuyasha is the rightful owner, after he was done using it, it just appeared on his side, for storing, until next time. Afterall, you can't go around traveling with a sword and not a sheathe, right?

I just assumed before they left the grave, they went back inside and got the sheath.

There's a lot of plot holes in Inuyasha like when How on earth did Miroku learn how to ride a bike?, or what would happen if a jewel shard when into the kazanna(air void)

The thing about Miroku learning to ride a bike quickly...I dunno. I guess he's pretty smart and has a good sense of balance. How else can he jump around fighting demons like that?
And if the Jewel fell into Miroku's wind tunnel...that's not really a plot hole so much is it an interesting scenario.

I don't see why they don't just leave all the pieces of the jewel they find in the future time where no one could get it.

Even if they did do that, someone would still need at least 1 piece of the shard to go back and forth between times. In that case, the person, probably Kagome, would be in more danger seeing as she'd be the only one with a shard. Then if they got the shard, they could go into the future time and just grab all of them at once. So, what would be the difference in having them all in the future or all in the past?

Oh I thought only Inuyasha and Kagome could go to the future time.

Why CAN Inuyasha pass through the well? He does it without jewel shards, doesn't he?
And doesn't the jewel increase Kagome's priestess powers a bit or is that just her own growth. For example, when they fight Sesshoumaru, when the hell bees first arrive, her arrow doesn't nearly have the power it does when she destroy's Naraku's body some 10-15 episodes later. They have gathered more jewel shards by that point. Was it just because she was mad?

The answers to your questions lie with the faults in the anime:
1) The jewel shards are not the reason why Kagome or Inuyasha can travel through the well. I know the anime said this, but the manga does not. Apparently something was misunderstood in the transition from the manga to the anime and the anime creators made this little slip up. The reason Kagome couldn't use the well that one time wasn't because Inuyasha had taken the big jewel shard; it was because Inuyasha had stuffed a tree down the well. No explanation has been given as to why only Inuyasha and Kagome can use the well, but the reason is not because of the jewel shards.
2) The reason Kagome could use her magic arrows in the way was because of the incident involving the Peach Man. If I recall correctly, in the manga Kagome first learned how to fire magical arrows during the Peach Man episode. Unfortunately, the anime decided to skip over that segment, later using it as a filler episode long after its original place in the storyline.

I figured it was their love that allowed the pass through time...

Hmm...interesting theory...I thought that it is because they both have a strong connection to the future. Kagome, well, she lives there; Inu-Yasha...umm..not sure, but (i'm guessing) he stays there...somehow...
