Do you mean like famous people who appear as themselves in anime (like how celebrities show up playing themselves on The Simpsons, sucking up the episode a good 90% of the time), or anime that make fun of famous people?
Supposedly, that Zenjiro guy in Kodomo no Omocha is a real person, but I can't say I've ever seen a photo of him, unless he's the same guy as the guy who was rapping on that Peyangu curry commercial from around 1993.

Keifer Sutherland and Elizabeth Berkley does the voices of Ross Sylibus and Naomi Armitage respectively in Armitage Polymatrix, and Juliette Lewis does the voice of Armitage in Dual-Matrix.

Do any Japanese celebrities ever show up playing themselves in an anime? I'm sure it must have happened at some point in anime history, probably in a comedy.

The band TOKIO made an appearance in Kodocha if memory serves. Beyond that I can't recall right now.
Anyway, as for celebrities that have leant their voice to anime, a few of the principal actors for the Matrix trilogy voiced their characters in The Animatrix (Keanu Reeves in A Kid's Story, Carrie-Ann Moss in Detective's Story, etc.). And, as others have mentioned, a number of Disney's Ghibli acquisitions have celebrity voiceovers (Claire Danes, Billy Bob Thornton, Gillian Anderson, Jada Pinkett-Smith, & Minnie Driver were all in Princess Mononoke, for example).

It seems like Disney will be getting big name actors for Nausicaa (Uma Thurman, Patrick Stewart). The only actor I recognised in Spirited Away was Michael Chiklis from The Shield (he plays Vic, the bald cop always beating the crap out of everyone).

Forgot to add that members of the production team don't count.
I think most of the production team of Urusei Yatsura: Beautiful Dreamer show up at various points in the crowd scenes towards the beginning of the movie for a second or two, but they don't actually speak or do anything to identify themselves, so it doesn't negate my question bringing that up.

I know famous Japanese actor, Takizawa Hideaki, did the voice of Shako (Sango's ancestor), in the last Inuyasha special. He is also one of the singers of the previous theme song, One Day One Dream with Imai Tsubasa.
I heard SMAP member and J-Drama actor, Kimura Takuya is going to act in a Miyazaki film.

THAT'S who it is....
Zenjiro sounds a whole lot like Akashiya Sanma from Odoru! Sanma Goten! (Dancing Sanma Palace)...
