OK cool, but when's the anime coming? The manga is fantastic.

Oh look, another Jump novel Viz will ignore since it's not Naruto/My Hero/Bleach/OP/FMA.

How would you know they will skip out on this too? Spy x Family is great and they definitely don't want to take a chance and miss out on the novel sales, hence why they took over the bi-weekly publication in Sep 2019 and saw how popular it is from Shueisha's own site.
How many light novels/novels that are under the Hitotsubashi Group or other licenses that align with what Viz publishes to their specific imprints, probably a lot, and yet Viz knows what their audience wants and will do a couple of novel titles a year to test the novel waters in a area that mainly does manga. Like how they are doing for the Viz Originals imprint for the graphic novel category, a little bit at a time. And then do a lot more throughout the following months and years as they start to build up on their gn/ln/n portfolio.
Now hopefully that Viz would do a same day novel publication (or at least a few weeks apart) instead of months after the Japanese comes out.
